There's speculation that the extra scene in Iron Man was originally a segment of the movie, but then was cut in post-production. They later decided to put it back in after the credits and plan to have surprises in the movies featuring the original Avengers. It's all about timing (story- and budget-wise) and I find it excellent how Marvel Studios plans on releasing the individual stories of the heroes that eventually become The Avengers and then putting them altogether for one spectacular nerdtastic motion picture.
